So I've found 2 new recipes recently that use various shredded vegetables that have seriously intrigued me. I've already made the
Meyer Lemon Zucchini Bread (it was awesome) and I just discovered a recipe today for a
Carrot Marmalade. I'm picturing it with the purple carrots I get every now and then from Central Market - how awesome would that be?!? Maybe it'll be a weekend project...
