This is a recipe for slow roasted tomatoes from one of Gwenyth Paltrow's GOOP newsletter from a while ago. I'd been meaning to try it for some time now and just finally got around to it about 2 weeks ago. OH MY! I'm addicted (and so is J). They are so insanely good, not to mention ridiculously easy to make. I've been putting them on slightly toasted bread with fresh mozzarella cheese, salt and pepper, and a drizzle of olive oil and it is heaven.
I've always been a fan of tomatoes in the roasted mixed vegetable trays that J and I cook up every now and then, and now with this new discovery I'm thinking I may need to try more roasted tomato recipes in the future. Maybe this one? Or this?
